That sounds like a great option in Hanoi. It really is such a brilliant. I would also recommend the restaurant Koto, which is a registered charity to help street kids form a career. From Hanoi, there are all kinds of options. You can take the sleeper train north to Sapa to visit the hillitribes, or make the 4 hour road journey to UNESCO protected Halong Bay, where you can spend the night on a junk boat.
